Main Ingredients

  • 1.5 lb chicken thighs bone-in or boneless
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons olive oil or butter
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Optional Additions

  • 1/2 cup peas or carrots
  • 1 tablespoon lemon juice for finishing

Instructions
 

  • Heat oil in a large pot over medium heat. Season the chicken with salt, pepper, and paprika.
  • Sear the chicken until lightly golden on both sides, then remove and set aside.
  • In the same pot, sauté the chopped onion and garlic until soft and fragrant.
  • Add the rice and stir for about 1 minute to lightly toast it.
  • Pour in the chicken broth and bring to a gentle simmer.
  • Return the chicken to the pot, cover, and reduce heat to low.
  • Cook for 20–25 minutes until the rice is tender and the liquid is absorbed.
  • Let the dish rest for 5 minutes, then fluff the rice and add optional lemon juice before serving.

Notes

Use chicken thighs for juicier results and avoid stirring while cooking to keep the rice fluffy. If the rice seems dry, add a small splash of broth and let it steam. Adjust seasoning at the end for best flavor. For variation, add vegetables or different spice blends.
