Ingredients
  

Chicken

  • 4 chicken breasts
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper

Sauce

  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese freshly grated
  • 0.5 cup sun dried tomatoes chopped
  • 1 tsp Italian seasoning
  • 0.5 tsp red pepper flakes optional

Instructions
 

  • Season the chicken breasts with salt and black pepper on both sides.
  • Heat olive oil in a large skillet over medium heat. Add the chicken and sear until golden brown on both sides. Remove and set aside.
  • In the same pan, add minced garlic and cook for about 30 seconds until fragrant.
  • Pour in the chicken broth and scrape the bottom of the pan to release any browned bits.
  • Add heavy cream, parmesan cheese, sun dried tomatoes, Italian seasoning, and red pepper flakes. Stir well.
  • Let the sauce simmer gently until slightly thickened.
  • Return the chicken to the skillet and cook until fully done and coated in the sauce.
  • Let the chicken rest for a few minutes before serving. Spoon extra sauce over the top.

Notes

Use freshly grated parmesan for the best texture and flavor. Avoid high heat once the cream is added to prevent the sauce from breaking. For a lighter version, substitute half and half for heavy cream. A squeeze of lemon juice at the end can brighten the dish if it feels too rich.
