Ingredients

Pizza Base

  • 1 pizza dough homemade or store bought
  • 30 ml olive oil

Toppings

  • 225 g raw shrimp peeled, deveined, patted dry
  • 3 garlic cloves minced
  • 1 tsp lemon zest
  • 150 g mozzarella cheese shredded
  • 75 g Gruyere cheese shredded
  • 30 g Parmesan cheese grated, divided
  • 8 g fresh parsley chopped
  • crushed red pepper flakes optional

Instructions

  • Preheat the oven to 260°C with a pizza stone or baking steel inside. Let it heat fully for at least 30 minutes.
  • Bring the pizza dough to room temperature, then stretch into a round on a lightly floured surface.
  • Brush the dough evenly with olive oil. Sprinkle mozzarella and Gruyere over the surface, leaving a small border.
  • Transfer the pizza to the hot oven and bake until the cheese begins to melt and the crust starts to set.
  • Remove the pizza briefly and arrange the raw shrimp evenly on top. Sprinkle with garlic, lemon zest, and half of the Parmesan.
  • Return the pizza to the oven and bake until the shrimp are opaque and the crust is golden and crisp.
  • Finish with remaining Parmesan, chopped parsley, and red pepper flakes if using. Slice and serve immediately.

Notes

Add shrimp partway through baking to avoid overcooking. Pat shrimp dry before using to prevent a soggy crust. Avoid pre-cooked shrimp, as they become rubbery when baked.
