Fluffy Cafe-Style Pancakes

Ingredients
  

Dry Ingredients

  • 240 g all-purpose flour
  • 25 g granulated sugar
  • 8 g baking powder
  • 2.5 g baking soda
  • 3 g salt

Wet Ingredients

  • 420 ml buttermilk
  • 2 large eggs
  • 57 g unsalted butter melted and slightly cooled
  • 5 ml vanilla extract

Instructions
 

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly combined.
  • In a separate bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined. Small lumps are normal. Do not overmix.
  • Let the batter rest for about 10 minutes to allow the gluten to relax and the pancakes to become fluffier.
  • Heat a non-stick skillet over medium-low heat and lightly grease it. Pour about 60 ml of batter per pancake.
  • Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip once and cook the other side for 1–2 minutes until golden.
  • Remove from the pan and serve warm with your favorite toppings.

Notes

Do not overmix the batter and always cook pancakes over medium-low heat for even cooking. Letting the batter rest is key for achieving cafe-style fluffiness.
