Instructions
 

  • Cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel lined plate. If using sausage patties, cook fully and set aside.
  • Lightly butter the cut sides of the bagels and toast until golden brown with crisp edges and a chewy center.
  • Crack the eggs into a bowl and whisk gently with salt and black pepper.
  • Melt butter in a nonstick skillet over low to medium heat. Pour in the eggs and cook slowly, stirring gently until soft and fluffy.
  • Right before the eggs finish cooking, place cheese slices over the eggs and allow them to melt slightly.
  • Assemble each sandwich by layering the bottom bagel half, eggs with melted cheese, bacon or sausage, and any optional toppings like avocado, tomato, spinach, or hot sauce.
  • Top with the remaining bagel half and serve immediately while warm.
  • For extra flavor and texture, wrap assembled sandwiches in foil for 1 minute before serving to help the ingredients settle together.
