  • 2 large chicken breasts or 4 small
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 cup milk or heavy cream
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp butter
  • 1 tbsp oil
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp dried thyme or Italian seasoning

Optional Additions

  • 0.5 cup shredded cheese optional
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Heat oil and butter in a large skillet over medium heat. Season the chicken with salt, pepper, and paprika. Sear each side for 4–5 minutes until lightly golden. Remove and set aside.
  • In the same pan, sauté the chopped onion until soft. Add minced garlic and cook for about 30 seconds until fragrant.
  • Add the rice to the pan and stir to coat it in the oil and flavors. Pour in the chicken broth and milk or cream. Stir in the thyme or seasoning.
  • Return the chicken to the pan. Cover with a lid and cook on low heat for about 20 minutes without stirring.
  • Check the rice for doneness. If tender and most liquid is absorbed, remove from heat. If needed, cook a few more minutes.
  • Optional: Stir in shredded cheese for extra creaminess. Garnish with parsley before serving.

Notes

For best results, avoid stirring while the rice cooks to prevent a sticky texture. Add a splash of broth or milk when reheating to restore creaminess. You can substitute chicken thighs for juicier meat or add vegetables like spinach or mushrooms for variation.
