Ingredients
  

Soup Base

  • 2 tbsp butter
  • 1 small onion diced
  • 2 medium carrots sliced
  • 2 stalks celery chopped
  • 4 cups chicken broth
  • 2 cups water
  • 2 cups egg noodles
  • 1 cup heavy cream or half and half
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper or to taste
  • 2 tbsp fresh parsley optional, chopped for garnish

Instructions
 

  • In a large soup pot, melt the butter over medium heat.
  • Add diced onion, sliced carrots, and chopped celery. Sauté for 5–7 minutes until softened and fragrant.
  • Pour in the chicken broth and water. Bring to a gentle boil.
  • Add the egg noodles and cook according to package instructions until just tender.
  • Reduce heat to low and stir in the heavy cream. Simmer gently for 5 minutes without boiling.
  • Season with salt and black pepper to taste. Garnish with fresh parsley if desired and serve warm.

Notes

Do not boil after adding cream to prevent curdling. For a thicker soup, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in during simmering. To freeze, prepare the soup without cream and add dairy after reheating for best texture. Store refrigerated for up to 4 days.
